Slow cooked cherry tomatoes with burnt butter sweet potato gnocchi
Add cherry tomatoes and some cloves of garlic to a lined oven pan, cover with olive oil, salt and dried oregano. Cook low and slow at 160 degrees for 20-30 minutes until the tomatoes are soft and jammy. Pan fry a packet of sweet potato gnocchi in our burnt butter. Stir the slow cooked cherry tomatoes, some of the cooked garlic and gnocchi together, finish with more dried oregano to taste.
